Old Oyster Factory's BROILED SEA SCALLOPS - 101 Marshland Rd., (843) 681-6040.

INGREDIENTS:
4 large sea scallops (not bay scallops)
2 oz. bread crumbs
1 shot sherry
fresh garlic
mushrooms

METHOD:
Rub scallops with bread crumbs until fully covered, top with fresh garlic and sherry. Broil at 350 degrees for about 10 minutes. While scallops are cooking, take your favorite mushrooms and saute them in butter and garlic. Once scallops are brown, place on sauted mushrooms and top with lemon beurre blanc. Serve with rice and vegetables.

LEMON BEURRE BLANC:

INGREDIENTS:
2 shallot onions, chopped
1/2 lb. unsalted butter
2 cups heavy cream
1/2 cup white wine
3 lemons
2 limes
salt
white pepper
chicken base to taste

METHOD:
Saute chopped shallots. Add white wine (lightly reduced), add cream and seasonings, whisk in butter over low heat, add lemon and lime juice for taste. Place on top of scallops. ENJOY!
